Who is Paolo
At 19 years of age, after some experience in the culinary field, Paolo discovers to be one of the youngest individuals diagnosed with ALS. The news did not stop him, and he manages to overcome the terrible news and continue in the pursuit of his dream to become a chef. While undergoing treatment he realizes he has an opportunity to do something good for many others. During the development and testing of his swab, Paolo also started preparing a series of recipes, which suitably prepared can allow patients to “taste” a good meal again. This might seem like a small deal, but it’s not. Paolo overcome a hard situation, with a clear message in mind: “never give up”. This project is an homage to everyone which suffers, and a way to cultivate hope.
